Fond Doux Holiday Plantation in St Lucia is a 19th century colonial plantation hotel set amidst the lush,
tropical foliage of St Lucia’s breadbasket close to the historical centre and world heritage site of Soufriere.
This rustic, ecological plantation hotel effortlessly marries old world colonial with every modern amenity in
nature’s richest surroundings. Enfused with a magical ambience, Fond Doux is sorrounded by tropical gardens and by one
of Soufriere’s most active agricultural plantations. The French colonial estate house overlooks original colonial
cocoa racks.

Staff Comment - We have replaces all incandescent bulbs with compact florescent lamps (CFL’S) for lighting switched
on for longer periods of time and use higher wattage bulbs. CFL’S use 70% less energy and last ten minutes
longer than incandescent bulbs. Florescent tube lamps are among the most efficient lamps.
We used occupancy censor controllers and energy –saver switches in our rooms.
We educate our staff to turnoff interior and exterior lighting, pumps, fans computers, printers etc.We incorporate
energy conservation practices into our daily operations.

Staff Comment - We have a towel reuse programme in place where by linens and towels are changed 2-3 days if contractual
obligations with operators follow or we set up a means of letting guests decide to use linen for more than one day.
We also track the towel and linen usage to monitor the effectiveness of the programme.
The impact of implementing a towel reuse programme extends the life of linen and laundry equipment. Also it reduces
the maintenance and labour requirements and it reduces the consumption of laundry chemicals by 22%.
We use low flow shower heads and tap aerators to generate the desired maximum flow output.
- Our soil is certified 100% organic; we do not use any pesticides and chemicals on this plantation.
- We collect the rain water from the roofs of the cottages and this is used to water the plants o the plantation.

Staff Comment - We use eco friendly materials.
- We also buy in bulk whereby we avoid butter, condiments and other food items in single portions packages:
avoid disposable cups, plates and products; use refillable amenity dispensers in guests’ bathrooms.
- We choose returnable bottles: allow guests to refill plastic water bottles, buy produce in returnable crates
and containers , use both sides of office paper for printing; only replace bin liners when necessary, use
refillable printer and copier cartridges: use rechargeable batteries for torches and radios etc.

Staff Comment - We educate our tour guides and employees in their responsibility of protecting the environment.
We have donated a piece of land to the community to serve as a community playing field.
We form part of St. Lucia hotel and tourism Association and also Caribbean Tourism Association. We attend seminars and workshops to remain current with best practices for small properties like ourselves.
We protect an archaeological site on the plantation.
We maintain and preserve our buildings which date back to 200 years.
Our cocoa which is 100% organic and is still harvested and grown the rational way, from the cutting, to the drying,
and fermentation to the cocoa dancing process and roasting. Some of this is exported to Hershey's in Pennsylvania.
We have a program in place where we have planted an additional 1000 cocoa trees and additional fruit trees to replace those that have aged and died.

Staff Comment - We buy local enabling local communities to benefit from tourism.
We mentor local suppliers so they quickly become part of our regular supply chain.
We promote local culture with themed evenings and traditional entertainment.
We work with tour operators to make excursions use local suppliers and include cultural events.
We include a variety of traditional dishes and drinks on the menu. All the vegetable and fruits that are used
in the restaurant are picked right here on the plantation and we also emphasie to pur guests about buying local.
We work with and participate actively in our community of Soufriere and Chateau Belair, where we now employ persons
from this rural community.
